PHILOSOPHY

Lievità introduces a brand new way to prepare and taste a pizza, by bringing  the ancient Neapolitan tradition to the next level in healthy & quality.

The secret is in the dough: Maestro Pizzaiolo Giorgio Caruso researches ended up in a unique mix that make the dough extremely light, therefor easy to digest – and – at the same time rich in nutrients and taste.

The ingredients selections comes straight after: Lievità only use top quality products, wonderful heritage of the mother land, Italy.

Lievità launched his first restaurant in April 2015 in the heart of Milan, followed by a second one in October 2016, in Milan too. Today, it is pleased to open the doors to the Uk clientele by opening 2 delivery kitchens in North London.

Lievità has been awarded with two pizza slices by Gambero Rosso (one of the most know food & wine magazine in the world).

LONDON PROJECT

Lievità is honoured to announce that HAS OPENED TWO Deliveroo Edition KitchenS in London, the most international and exciting city worldwide. It is thought to be the first time an international Deliveroo restaurant has been able to enter the UK through Deliveroo Editions

Our first “BESPOKE” kitchen – delivery only, with dedicated riders and fully equipped with the same machineries that we use in our two restaurants in Milan – WAS LAUNCHED ON OCTOBER 17TH in the Islington area, London central Zone 2. A SECOND “BESPOKE” kitchen WAS LAUNCHED ON OCTOBER 31st in Swiss Cottage area, London central zone 2

Our Maestro Pizzaiolo, Giorgio Caruso said, “We have been successfully working with Deliveroo in Italy since 2015 and now Deliveroo Editions will enable our brand a simple and smart route-to-market across cities around the world that are passionate about great food”.

THE DOUGH OF LIEVITÀ

Lievità uses only semi-integral flour type 1 and wholemeal flour, both are tender and 100% Italian grain selected and ground stone.They contain all the parts of the grain and keep all the nutritional properties of the grain, as well as having a more intense flavor and scent due to the oils in the germ. The base mix of Lievità is ​​made daily with reduced use of salt in order to enhance the mineral salts already present in the flour: before becoming pizza it is matured from 24 to 48 hours.
All this results in a faster digestion and a feeling of LIEVITÀ never experienced.

GIORGIO CARUSO

Our Master Pizza Chef Giorgio Caruso, born in 1983 in Caserta, belongs to the “New Neapolitan School of Pizza”, which has a more gourmet approach when compared to the traditional school.

Before reinventing himself as a pizza chef, he attended a course on sculpture at the “Accademia delle Belle Arti” in Naples and this explains why Giorgio strives to express his artistic streak in his pizzas everyday.

Our “Maestro” certainly doesn’t lack the courage to experiment with “tailor-made” recipes for his pizzas.

As result of years of researches Maestro Pizzaiolo Giorgio Caruso mixes wholemeal flour and stone-ground flour, both tender and 100% Italian grain. The base mix of Lievità is ​​made daily reducing salt addition in order to enhance the mineral salts naturally contained in the flours: before becoming pizza it is matured from 24 to 48 hours.
